Directions
- Preheat the oven to 325°F (165°C).
- Prepare the crust by mixing graham cracker crumbs, melted butter, granulated sugar, and salt. Press the mixture into the bottom and up the sides of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.
- Make the filling by combining cream cheese, sour cream, granulated sugar, eggs, egg yolks, and vanilla bean paste or extract. Pour the filling into the cooled crust and bake the cheesecake.
- Once the cheesecake has cooled, use the cream charger to whip the heavy cream. The whipped cream can be used as a topping for the cheesecake before caramelizing the sugar.
